Barcelona's most famous delicatessen chain and Salamanca's most innovative acorn-fed Iberico pork producer and sales leader will be at the 12th Madrid Fusion International Gastronomy Summit. This will involve a replica Mas Gourmet tasting space stocked with a selection of its star products
With 15 establishments shared between Barcelona and Madrid and stocking over 4500 products, including cheeses, smoked meats, wines, jams and preserves painstakingly selected from the leading artisan producers, Mas Gourmets has become a retail benchmark in gourmet food, both within and beyond Catalonia. Its experience is backed by three generations of proprietors who, since 1945, have continually managed to reinvent the business, adapting its offering to an increasingly demanding and well-travelled public. Jorge Mas, from the third generation of the family business and current alma mater of Mas Gourmets, has long wanted to bring the unique experience available in his establishments to IFEMA (Madrid's trade fair association) using a replica of the tasting spaces that operate in three of his stores, and a selection of some of the products they sell. This includes pork products such as Carrasco-Guijuelo Iberico de bellota (acorn-fed) ham, white pork sausages, black pepper sausages, salamis, black butifarra sausages and white butifarra with Mas Gourmet's foie gras. The public can enjoy these delights unadorned or as innovative tacos and sandwiches.
The latter include asparagus puree, pea and crispy ham tacos, pork crackling crumble tacos and mini egg butifarra with cream cheese, and tacos of apple, quince and mini black butifarra with foie gras. Then there is the Carrasco Guijuelo ham sandwich, a fusion of the best Mas Gourmets has to offer in its stores in the search to create the perfect sandwich: Tricticum wheat bread, vine-ripened tomatoes, Oleum Flumen extra virgin olive oil and Iberico ham from Carrasco. Carrasco's Iberico offers all the flavour born from the long traditions of an artisan family business, totally committed to innovation and the use of the best raw materials grown on its farms in Extremadura, cured in its own drying rooms in Guijuelo, heart of the famous Denomination of Origin region to which it gives its name.
